使用上方的直接高温加热食物，通常是烤箱或烤架；也可以指暴露在强烈的高温下。

“Broil” 主要用于美式英语，英式英语则用 “grill”。在英文食谱中，'broil' 是指用烤箱上方的高温加热。不要和 'bake'（全方位加热）或 'roast'（明火或烤箱慢烤）混淆。
