물이나 국 등 액체를 끓기 시작할 때까지 데우는 것. 요리할 때 자주 쓰임.

요리책이나 방송에서 자주 들을 수 있다. 모든 액체에 쓸 수 있고, ‘끓으면 불을 줄인다’는 설명이 뒤따를 수 있다. 상황이 절정에 달했다는 비유에도 쓰임.
