何かが上向きに飛び出ること、または脅迫や武器を使って強盗することを指します。

Usage Notes (Japanese)

カジュアルな言い方です。髪や枝などが突き出ている時や、強盗（スラング）の意味で使われます。「stand up for」（味方をする）とは意味が違います。
