Definition
一種用野生酵母和細菌自然發酵製成的麵包,味道略帶酸味。用於發酵的酵母混合物也叫酸麵團。
Usage Notes (Chinese (Traditional))
常指『酸麵包』,有時也指『酸麵團』(發酵種)。多見於手工烘焙,帶有明顯的酸味,與一般白麵包不同。避免混淆一般酵母麵包。
