Latching normalmente significa fechar algo com uma tranca, ou quando um bebé se agarra ao peito para mamar.

Usado principalmente em contextos técnicos, mecânicos e na amamentação. Raramente surge em linguagem informal além desses campos. Na amamentação, 'good latching' significa uma pega adequada do bebé. Não confundir com 'fechar' genericamente, pois 'latch' é um fecho específico.
