山葵是一種日本植物的根部製成的綠色辣醬,常和壽司或生魚片一起享用。

山葵一般用作調味料。在日本以外,多數所謂“山葵”其實是辣根加上綠色素,因真正山葵價格較高。其辣味強烈但不持久。
