イタチは小さくて細長い体を持つ素早い動物です。口語では、ずる賢く信用できない人のことも指します。

Usage Notes (Japanese)

動物の意味ではやや堅い表現、比喩で人に使う時は非公式でやや侮辱的です。'weasel out of'はずる賢く何かを避ける場合に使います。フェレットやマングースとは異なります。
