若い牛（子牛）からとれる肉で、非常に柔らかくて色が淡いのが特徴です。ヨーロッパ料理でよく使われます。

「veal」は不可算名詞です。「veal cutlet」「veal stew」などの料理名でよく使われます。倫理的な理由から食べない人もいます。

We had veal for dinner last night.
