川や流れの上流方向、つまり水の流れに逆らって源流側を指します。また、プロセスや作業の初期段階を表す場合もあります。

'upstream'は直訳で川の上流にも、比喩的にプロセスやサプライチェーンの初期段階にも使われます。反義語は'downstream'です。
