主に野生動物を違法に狩猟・捕獲することを指します。また、卵や魚などを沸騰直前のお湯でやさしく調理する方法も指します。

犯罪として使う場合は違法な行為です（例：'wildlife poaching'）。料理では『ポーチドエッグ（poached eggs）』や『魚のポーチング』とよく使います。
