とても珍しくて信じがたいこと。また、ものすごく素晴らしい場合にも使います。

強い驚きや感動を表すときによく使います。たとえば「The food was incredible.」は「食べ物が最高だった」という意味になります。単に「良い」よりも強い表現です。
