Es una forma humorística de decir que estás absolutamente seguro de que algo no sucederá. Lo usas cuando dudas mucho de algo, no porque realmente vayas a comerte un sombrero.

Muy informal y con tono de broma, más común en el inglés británico o en inglés antiguo americano. No se usa literalmente. Se emplea tras asegurar que algo es casi imposible: 'If X happens, I'll eat my hat.' No es apropiado para contextos formales.
