조리 전에 고기나 채소를 양념이나 소스에 담가 맛과 식감을 더하는 것.

'재우기'는 주로 고기에 쓰이지만, 채소에도 사용함. 양념에 담그는 소스를 '양념장'이라고도 함. '닭고기 재우기', '하룻밤 재우기' 등과 같이 씀.
