会社の帳簿や会計記録を意図的に改ざんして、実際よりも業績が良いように見せかけること。たいてい不正や違法な目的で行われます。

ビジネスやニュースで使われる口語的なイディオムで、必ず不正・違法な行為を指します。単なるミスではなく、意図的な改ざんに使われます。「We don’t cook the books」は「不正をしません」という意味。
